Here’s a tasty recipe for Masala Pasta making it a very Indian adored dish! This is a mash up of Indian spices and pasta. Ingredients:
For Pasta:
Pasta: 2 cups (penne/fusilli or macaroni can work too)
Sufficient water for boiling pasta
Salt: 1 tsp (boring salt put while the water is boiled)
Slightly salted oil (1 tsp)
For the masala
Oil (2tbsp)
Cumin seeds (1 tsp)
Onion chopped ( 1 medium)
Paste of ginger and garlic – 1 tsp
Tomato – 2 medium finely chopped/pureed
1 green chili finely chopped (optional)
1 capsicum (bell pepper) diced
1 small carrot finely chopped
Peas-¼ cup (optional)
Turmeric powder – ¼ tsp
Red chili powder – ½ tsp (adjust as per your taste)
Garam masala – ½ tsp
‘Pav Bhaji’ masala – 1 tsp (optional but best to put )
Salt – as per taste
Ketchup-2 tbsp
Cream (optional) – 1 tbsp to add richness
Coriander leaves – 2 tbsp, finely chopped
Instructions:
1. Boil the Pasta:
Take a big pot and fill it with water. Place it on high heat to boil and add salt and also 1 tsp of oil.
Put the pasta and cook for the time as mentioned in the package until it is al dente.
Drain the pasta, rinse with cold water and rest the pasta further.
2. Prepare the Masala Heat oil in a pan. Add jeera, let it splutters.
Then add in chopped onions and sauté them until they turn golden brown.
After that add ginger-garlic paste and green chili; sauté for a minute.
Now add the chopped tomatoes and cook until they are soft and squishy.
Then add tumeric powder, red chili powder, garama masala, pav bhaji masala and salt. Combine.
Add in capsicum, carrots, peas or any other vegetables if available. Continue to cook till softening occurs.
3. Combine Pasta and Masala
Ketchup is added in the mixture and stirred.
The cooked pasta is added in the prepared masala. Toss the pasta lightly so that the pasta gets coated with the masala.
Add cream (optional), if a desire creamy texture is needed. 4. Garnish
Add freshly chopped coriander leaves and serve hot.
Serving Suggestions:
Serve with some garlic bread or a crispy salad.
That's more Queso on top, and that is so much better.
